Kari Vathakal [Mutton Fry]

Ingredients:
  • Mutton - 300 g
  • Small onion - 12-15
  • Dried red chili - 6-7
  • Turmeric - 1/2 tsp
  • Salt - 1 tsp
  • Jeera powder - 3 tsp
  • Water - 1/2 cup
  • Oil - 4-5 tbsp
Directions:
  1. Cut the mutton into small pieces of desired size. Cut the small onion into halves. 
  2. Heat the oil in a pressure cooker. Add the mutton pieces, salt, and turmeric powder. Add half a cup of water and pressure cook until 1 whistle blows. Turn the cooker off and open once the pressure reduces. Check to ensure that the mutton has cooked fully.
  3. Transfer the contents of the pressure cooker to a kadai. Add the dried red chilis and the chopped onion. Keep on a low flame and cook until the water boils out. A lid can be used to cover the kadai as the mutton cooks. Add the jeera powder. Add salt to taste.  Stir to ensure that the mutton doesn't stick to the kadai. Cook on a low flame until the oil separates. Kari vathakal is ready!
Chop the mutton into small pieces. Heat some oil in a pressure cooker. Add the mutton, turmeric, and salt. Add half a cup of water. Pressure cook for 1 whistle. Open after the pressure reduces.

Transfer the mutton to a kadai. Add small onion or chopped large onion and dried red chili. Keep the mutton on a low flame and cook until the water boils out. Add jeera powder and cook until the oil separates.

Kari Vathakal is ready!
Serving Suggestions:

  • Tastes best with rasam rice
  • The mutton pieces and oil can be mixed with rice to make mutton rice.
