Chocolate Chip Muffins

Yield: 12 medium size muffins/ 6 large muffins
Ingredients:
- Soft margarine - 1/2 cup
- Super fine sugar - 1 cup
- Large eggs - 2
- Full-fat unsweetened yogurt - 2/3 cup
- All purpose flour - 2 cups
- Milk - 5 tbsp
- Baking soda - 1 tsp
- Dark chocolate chips - 6 ounces
Directions:
- Line muffin pan with paper cups.
- Place the margarine and sugar in a large mixing bowl and beat with a wooden spoon until light and fluffy. Beat in the eggs, yogurt and milk until combined.
- Sift the flour and baking soda together and add to the mixture. Stir until just blended.
- Stir in the chocolate chips. Then spoon the mixture into the paper cups and bake in a preheated over at 375 F for 25 min, or until a toothpick inserted into the center comes out clean. Cool the muffins in the pan for 5 min. Then turn them out on to a wire rack to cool completely as shown in the picture above.

Variations:
- For chocolate and orange muffins, add the grated rind of 1 orange and replace the milk with fresh orange juice.
- The mixture can also be used to make 24 mini muffins or 6 large muffins. For mini muffins, bake for 10 mins or until springy to touch.
