Chocolate Chip Muffins

Yield: 12 medium size muffins/ 6 large muffins

Ingredients:
  • Soft margarine - 1/2 cup
  • Super fine sugar - 1 cup
  • Large eggs - 2
  • Full-fat unsweetened yogurt - 2/3 cup
  • All purpose flour - 2 cups
  • Milk - 5 tbsp
  • Baking soda - 1 tsp
  • Dark chocolate chips - 6 ounces

Directions:
  1. Line muffin pan with paper cups.
  2. Place the margarine and sugar in a large mixing bowl and beat with a wooden spoon until light and fluffy. Beat in the eggs, yogurt and milk until combined.
  3. Sift the flour and baking soda together and add to the mixture. Stir until just blended.
  4. Stir in the chocolate chips. Then spoon the mixture into the paper cups and bake in a preheated over at 375 F for 25 min, or until a toothpick inserted into the center comes out clean. Cool the muffins in the pan for 5 min. Then turn them out on to a wire rack to cool completely as shown in the picture above.
  5. Enjoy the tasty muffins!

Variations:
  • For chocolate and orange muffins, add the grated rind of 1 orange and replace the milk with fresh orange juice.
  • The mixture can also be used to make 24 mini muffins or 6 large muffins. For mini muffins, bake for 10 mins or until springy to touch.
