Green Beans Poriyal [Stir-fry]

Green Beans Poriyal

Ingredients:
Ingredients (From top left): Green beans, chopped green beans,
chopped onion, dried red chili, mustard seeds, urad dhal

  • Green beans - 2 cups
  • Salt - 1 tsp
  • Grated Coconut - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad dhal - 1/2 tsp
  • Oil - 1-2 tbsp
  • Onion - 1
  • Dried red chili - 4-5
  • Curry leaves - 8-10

Directions:
  1. Chop the onion finely and keep aside. Chop the green beans into small pieces. I've chopped both the onion and the green beans in the vegetable chopper in the pictures. Break the dried red chili into 2-3 pieces each.
  2. Heat the oil in a shallow pan. Add the mustard seeds one the oil is hot. Add the urad dhal, onion, dried red chili, and curry leaves. Stir fry for 1-2 minutes.
  3. Add the chopped green beans. Mix well with the onion. Cover the pan with a lid and keep in a low flame until the beans are cooked - approximately 5-10 mins. Open and stir occasionally to ensure that the beans don't stick to the pan.
  4. Once the beans are cooked, add the grated coconut and mix well. Stir fry for 1-2 minutes and remove from the stove. The green beans poriyal is ready!
Stir fry the onion and spice. Add the beans. Cook with the lid on. Add coconut before removing from the stove.

Green beans poriyal is ready!

Serving Suggestions:
  • The poriyal tastes good with sambar/paruppu and rice.
  • It can also be eaten as a salad.
