Carrot Poriyal [Stir-Fry]

Carrot Poriyal

Ingredients:
  • Carrots - 300 g
  • Grated coconut - 1/4 cup
  • Moong dhal - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad dhal - 1/2 tsp
  • Onion - 1/2 cup
  • Green chili - 4-5
  • Salt - 1 tsp
  • Water - 1/2 cup
  • Oil - 1 tbsp
  • Curry leaves - 6-7
Directions:
  1. Dice the carrots and onion. Slice the green chili. Soak the moong dhal in 1/4 cup of water. 
  2. Heat the oil in a kadai. Add mustard seeds, urad dhal. Add the green chili, onion, and curry leaves. Stir for 1-2 minutes. 
  3. Add the carrots, moong dhal and salt. Mix well. Add some water. Reduce the flame and close with a lid. Let the carrot cook well. 
  4. Once the water has boiled out, add the grated coconut and stir well. Carrot poriyal is ready!

Heat oil in a a kadai. Add mustard seeds, urad dhal. Add the green chili, onion, and curry leaves. Stir for 1-2 minutes. Add the carrots, moong dhal and salt. Mix well. Add some water. Reduce the flame and close with a lid. Let the carrot cook well. Once the water has boiled out, add the grated coconut and stir well.

Carrot Poriyal is ready!
Serving Suggestions:

  • The carrot poriyal can be taken with paruppu, sambar or rasam rice.
  • Instead of cooking in the kadai with water, the carrot can also be cooked in a pressure cooker for one whistle.
  • Beetroot poriyal is also made the same way, substituting the carrot for beetroot.
  • Can be eaten as a salad as well!
