Carrot Poriyal |

Ingredients:
- Carrots - 300 g
- Grated coconut - 1/4 cup
- Moong dhal - 1 tbsp
- Mustard seeds - 1/2 tsp
- Urad dhal - 1/2 tsp
- Onion - 1/2 cup
- Green chili - 4-5
- Salt - 1 tsp
- Water - 1/2 cup
- Oil - 1 tbsp
- Curry leaves - 6-7
Directions:
- Dice the carrots and onion. Slice the green chili. Soak the moong dhal in 1/4 cup of water.
- Heat the oil in a kadai. Add mustard seeds, urad dhal. Add the green chili, onion, and curry leaves. Stir for 1-2 minutes.
- Add the carrots, moong dhal and salt. Mix well. Add some water. Reduce the flame and close with a lid. Let the carrot cook well.
- Once the water has boiled out, add the grated coconut and stir well. Carrot poriyal is ready!
